Summer Entertaining with Fancy Tomato Sandwiches

If you’ve been growing your own tomatoes this summer, they’re probably starting to ripen and will be perfect for this tasty recipe!

Even if you don’t have a garden or belong to a community garden – you can always snag a delicious heirloom tomato at the farmers’ markets, or at your local grocery store.

We found this recipe in the latest issue of REAL SIMPLE magazine, but as with most recipes we share, feel free to switch up the ingredients to your liking!


  • 3/4 cup salted butter, softened, at room temperature
  • 1/4 cup plus 2 tbsp finely chopped fresh chives
  • 2 long baguettes (we recommend making a trip to Ethos in Richland!)
  • 8 ounces Gruyere, Comte, or sharp Cheddar cheese, sliced 1/4 inches thick
  • 8 small-to-medium firm-ripe heirloom tomatoes, cored and sliced 1/4 inches thick
  • 3/4 tsp kosher salt
  • freshly ground black pepper
  • 3 cups baby arugula
  • 2 cups crispy fried onions, such as French’s


  1. Stir butter and chives in a medium bowl until smooth and well combined.
  2. Split baguettes horizontally. spread chive butter on cut sides of baguettes.
  3. Arrange cheese on bottom baguette halves.
  4. Layer sliced tomatoes on top of cheese, seasoning tomatoes with salt and several grinds of pepper as you go.
  5. Top with arugula and onions.
  6. Replace top baguette halves. Slice each sandwich crosswise into 8 pieces for an appetizer or 4 pieces for a main.

*BONUS: You can make this sandwich ahead of time! Simply refrigerate chive butter in an airtight container for up to 5 days. Let come to room temperature before using.
