A Slice of Thanks!

When you think of Thanksgiving – you automatically think of… Pumpkin Pie. It IS the season of Pumpkin Spice everything, so why not indulge in an extra yummy pumpkin pie, baked from scratch?

It’s hard to reinvent the wheel when it comes to something as straight-forward as pumpkin pie – especially when most of the ingredients come in a can – so we’re going to go ahead and take Food Network’s recipe for the BEST Pumpkin Pie as our pie to bake this holiday!

PIE INGREDIENTS:
1 disk Pie Dough, recipe follows, (plus 1 disk, if decorating)
All-purpose flour, for dusting
1 15-ounce can pure pumpkin
1 1/4 cups heavy cream
2/3 cup granulated sugar
3 large eggs
1 teaspoon ground cinnamon
1/2 teaspoon freshly grated nutmeg
1/2 teaspoon vanilla extract
1/4 teaspoon salt
Coarse sugar, for sprinkling (optional)

BASIC PIE DOUGH:
2 1/2 cups all-purpose flour
4 tablespoons cold vegetable shortening
2 teaspoons sugar
1 teaspoon apple cider vinegar
1/2 teaspoon salt
12 tablespoons (1 1/2 sticks) cold unsalted butter, cut into small pieces
